And Now We Would Like To Introduce...
Hello Lovely Portland! Back to Eden would like to take this time to introduce the newest member of our team Kielly!
We thought the best way for everybody to get introduced would be a little question and answer time.
B2E: Let's start out with a little bit about yourself. Are you a life long Portlander, or a transplant?
Kiki: I am actually a very recent transplant! I just moved up here the end of December and have never
felt more at home than I do in this city! I have truly fallen in love with Portland, and its beauty
never ceases to amaze me!
B2E: So where did you move here from?
Kiki: I hail from Central California in a little city called San Luis Obispo. I've lived a pretty nomadic life
but SLO Town is definitely my home base.
B2E: How long have you been a Vegan?
Kiki: I've been Vegan for almost 6 years now. March is the magic marker!
B2E: Do you have any experience or background in baking?
Kiki: Professionally speaking, yes. I have been working as a baker the last 2 1/2 years as well as coffee
shops for another 5 or so years. Personally speaking, I have been baking and cooking my entire
life. If there was ever a calling or passion in my life it's this. I love, love, love food and I especially
love the creative freedom and joy that I get from Vegan baking!
B2E: Have all the bakeries you've worked at been Vegan?
Kiki: No actually, this is my first experience in a completely Vegan bakery (thrilled by the way), but I
have managed to systematically work in extensive Vegan lines of pastries in the bakeries I worked
at. I also had some Gluten Free options sneak in there too. I have to take care of all my peeps!
B2E: What is your favorite treat to make?
Kiki: Oh no! That's like asking a mother to choose her favorite child! Haha. It's changing all the time.
I love working with my hands so I will always have a deep passion for bread. It's such a
commitment and scientifically speaking, bread making absolutely fascinates me! But in terms of
sweet, yummy treats I absolutely love making cookies! There is something so comforting, safe, and
approachable about cookies. My whole mantra in terms of baking/cooking is just to love and take
care of people and cookies have always seem to hit the spot! That, and I have so much fun
expressing myself creatively through them!
B2E: What's your favorite treat that we have in the store right now?
Kiki: Oh my goodness! The Chai soft serve ice cream is blowing me away! It's my first experience with
soft serve since I became a Vegan and it's so exciting to be able to eat this again! I would also have
to say that the Spicy Pear Bundt Cake is amazing! Mmmm...too much goodness. Haha!
B2E: Awesome! Any final thoughts or words you want to leave with our readers?
Kiki: I am just so excited to be here! Feels like home already! I can't wait to get integrated into the
Alberta neighborhood and to get to know everyone! I just love people and love baking and I know
that Back to Eden is going to be the perfect marriage of the two!

What an absolutely stunning morning here in Portland!! And what a beautiful day to celebrate the returning light and the approach of Spring!! As we light our candles and say our blessings we give thanks for our incredible community that has made this such a great experience.
